Sometimes you just want a home cooked meal and today was the day to put my cooking skills to use. I decided to make mac & cheese, tikka masala baked chicken, and roasted zucchini.

 Brought some organic chicken legs and seasoned them with black pepper, seasonings salt, lemon pepper, and garlic salt. Garnish with onions and garlic. Cover with foil and Bake at 450 degrees for 55mins.  The last 15mins I added Tikka Masala simmer sauce.

My aunt’s famous Mac & Cheese. I’ve seen my aunt make Mac & Cheese many times and I decided to give her recipe a whirl and now I’m the designated Mac & Cheese maker.



Start with gathering your ingredients: butter, egg, milk,  Campbell’s cheddar cheese, shredded cheese. I use at least three different types of cheeses. Boil noodles (make sure not to over cook the noodles). Drain noodles, season with pepper and seasoning salt. Add butter (don’t be shy). Add one egg  to the noodles & mix well. Add 2 cups of milk and Campbell’s cheese  stir until mixed. Add a few pieces of butter to the bottom of your baking dish before adding noodles and cheese. Now layer noodles and then cheese in that order and top with tons of cheese. Bake at 350 degrees until cheese melted and slightly browned on top.

Next! I roasted zucchini… Sprinkle with olive oil and season with lemon pepper and sea salt. Bake at 350 for 20mins.
